Desserts: Peanut Cookies
Ingredients
- 2 ½ cups of flour
- 2 cups of cornstarch
- 2/3 cup of powdered sugar
- 2 cups of margarine
- 1 tablespoon of vanilla
- 1 egg
- 1 tablespoon of milk
- Chopped toasted peanuts to taste
Preparation
Sift the flour with the cornstarch and powdered sugar. Add the margarine in chunks, mixing with two forks. Incorporate the vanilla and bring the dough together, working it very little with your fingertips. Let it rest for a few minutes, then roll it out on a floured surface. Cut the cookies into the desired shape and place them on lightly greased and floured baking sheets. Lightly beat the egg to combine the yolk and white, then add the milk. Brush the cookies with this mixture and sprinkle the chopped peanuts, pressing them slightly so they stick to the dough. Bake at moderate heat for 15 to 20 minutes. The cookies should dry out but not brown. Let cool and store in an airtight container.
