Fish/Seafood: Squash Locro
Ingredients
- 1 kg of squash
- 1 ear of corn cut into four pieces
- 3 potatoes cut in half
- 1 chopped onion
- 1 small tomato diced
- ½ teaspoon of pepper
- 1 fish backbone
- 1 teaspoon of ground garlic
- Crumbled fresh cheese
- Salt to taste
- Cilantro sprigs
Preparation
Boil the squash, potatoes, corn, and cilantro in a pot with a little water. Finally, place the fish backbone on top of these vegetables. Once the vegetables are cooked, remove and set aside. Mash the squash with a fork to make a puree. Set aside.
In a separate pot, sauté the garlic, onion, tomato, and pepper in oil until golden. Once golden, add the squash puree, potatoes, and corn pieces. Stir well, adjust the salt, and add the crumbled cheese. Serve with white rice, fried fish, and an onion salad.
