Fish/Seafood: Fish à la Jardinera
Ingredients
- ½ kg of fish fillets
- ½ cup of diced carrots
- ½ cup of cooked peas
- 1 small onion
- 1 small tomato
- 1 bay leaf
- ½ tablespoon of paprika
- 1 tablespoon of ground garlic
- Breadcrumbs for frying the fish
- Water
- Salt, pepper
- Oil
Preparation
In a pot with a little oil, sauté the ground garlic, diced onion, chopped tomato, bay leaf, salt, pepper, and paprika. Fry for a few minutes and add the carrots. If necessary, add a little water for cooking.
Separately, season the fillets with salt and pepper, coat them with breadcrumbs, and fry in hot oil. Remove and keep them warm.
Once all the sauce ingredients are cooked, add the peas. Stir well and pour the sauce over the fried fish fillets. Serve with white rice.
