Cold Starters: Chicken Ceviche
Ingredients
- ½ boneless chicken cut into pieces
- ½ teaspoon of pepper
- ½ teaspoon of cumin
- 1 tablespoon of ground garlic
- 2 tablespoons of ground yellow chili pepper
- 1 lemon
- 1 onion, cut lengthwise
- 1 tablespoon of chopped cilantro
- Salt
- Oil
Preparation
Heat the oil in a pot, add the pepper, salt, cumin, garlic, and ground yellow chili pepper, and sauté. Add the raw chicken pieces with a little water. When the chicken is tender, add the onion, then immediately the lemon juice and chopped cilantro. Stir until the onion is crisp. Remove and serve with potatoes or white rice.
