Chicken: Rice with Duck
Ingredients
- 4 cups of raw rice
- ½ cup of margarine
- 1 duck cut into pieces (can be replaced by chicken)
- 4 chopped onions
- 2 teaspoons of ground garlic
- 1 cup of blended cilantro
- 1/3 cup of chopped fresh yellow chili pepper
- 1 shot of pisco
- 4 cups of dark beer
- 1 cup of water
- Salt, cumin, and pepper to taste
Preparation
In a bowl, combine the pisco, a little ground garlic, salt, pepper, and cumin. Mix well and rub this mixture onto the duck pieces. Marinate for 2 hours.
In a large pot, heat the margarine and brown the duck well. Remove the duck pieces and set aside. In the same pot, brown the remaining garlic, onions, cilantro, salt, pepper, cumin, and ground chili pepper. Boil for 8 minutes and add the duck and the rest of the marinade. Simmer until the duck is cooked. Add the water and beer. Once it starts to boil, add the rice. Cover the pot and cook on low heat for about 15 minutes. Serve on a platter with the rice in the center and the duck pieces around; garnish with thin strips of chili and bell pepper.
