Pork: Almond Pork
Ingredients
- 1 kilo of pork, cut into pieces
- 100 g of peeled pecans
- 2 "ají mirasol" chilies
- 1 onion
- 1 bell pepper
- Salt and pepper
- A pinch of sugar
- One bay leaf
Preparation
Clean and boil the chilies in a liter of water. Remove the chilies and blend them with very little cooking liquid. Set aside and save the rest of the cooking liquid. In a large pot, lightly brown the pork in some oil, adding salt, sugar, and pepper. Add the onion and bell pepper cut lengthwise, the cooked and blended chili, and the chopped pecans. Add half a liter of the reserved cooking liquid and cook over low heat.
