Beef/Lamb: Wheat
Ingredients
- ¼ kg of wheat
- ½ teaspoon of pepper
- ½ teaspoon of cumin
- 1 small tomato
- 1 small onion
- 3 tablespoons of ground chili pepper
- ½ teaspoon of paprika
- 2 tablespoons of ground garlic
- 2 tablespoons of chopped fresh cilantro
- Potatoes cut in half
- Beef or chicken pieces
- Salt and oil
Preparation
Carefully sort through the wheat to remove all impurities and let it soak in water for 24 hours. The next day, wash it well and pick out any remaining impurities.
Cook the wheat in water for ten minutes, change the water, and boil again until fully cooked. Set aside.
In another pot with hot oil, fry the chopped onion and tomato. Add pepper, cumin, chili pepper, and paprika. Once well fried, add water, the halved potatoes, and the beef or chicken pieces. When everything is cooked, pour this mixture into the wheat, stirring to combine. Adjust the salt and add the chopped cilantro. Serve with white rice.
Recommendation: Check the consistency of the stew, as it thickens a bit when it cools. If necessary, add a little water before serving.
