Side Dishes: Olluco Stew
Ingredients
- ½ kg of ollucos
- 1 small tomato
- 1 small onion
- 1 tablespoon of garlic
- 1 tablespoon of pepper
- oil
- salt to taste
- grated fresh cheese (optional)
- chopped cilantro (optional)
Preparation
Wash the ollucos thoroughly. They can be prepared either raw or cooked.
Raw: use a mortar to crush the ollucos and divide them into two or three parts.
Cooked: boil the ollucos in a little water, then mash them with a fork. Reserve the cooking water.
Sauce: in a saucepan, pour in the oil, onion, tomato, garlic, salt, and pepper. Once well browned, add the ollucos. If using raw ollucos, add water to cover the preparation. If using cooked ollucos, add some of the cooking water. Stir and monitor the cooking, as ollucos tend to burn once cooked. Sprinkle with chopped cilantro and fresh cheese. Serve with white rice, and it can be a side dish for fried fish.
