Chicken: Chicken Ají
Ingredients
- 2 chicken breasts or hen breasts
- 1 chopped onion
- 1 teaspoon of pepper
- 1 teaspoon of ground cumin
- 1 tablespoon of ground garlic
- 5 tablespoons of ground yellow chili pepper
- 1 tablespoon of ground roasted peanuts
- 1½ pieces of bread soaked in chicken or hen broth
- Salt
- ½ cup of evaporated milk
- ½ kg of boiled potatoes, cut in half

Preparation
Boil the chicken breasts with vegetables to make a good broth. Once cooked, remove them from the broth and shred the meat. Set aside.
Soak the bread in a bit of broth for half an hour. Remove the bread and drain all the excess broth. Blend the bread with a little broth and set aside.
Cut the chili peppers, remove the seeds and veins. Wash them well and blend with a little broth. Set aside.
In a pot with oil, fry the chopped onion, cumin, pepper, garlic, and blended chili peppers. When well fried, add a bit of broth, the shredded chicken breasts, ground roasted peanuts, and the blended soaked bread. Stir well and check the salt. Lastly, before serving and without stirring, add the milk to make the mixture creamy.
Place 2 pieces of boiled potato on each plate and cover them with this mixture. Garnish with 2 quarters of hard-boiled egg and two or three olives. Serve with white rice.
