Chifa (Asian-Peruvian): Chaufa Rice
Ingredients (for 6 people)
- ¾ kg of rice
- 150 grams of roasted pork
- 4 tablespoons of lard
- 2 teaspoons of salt
- 1 bunch of spring onions
- 1 tablespoon of soy sauce
- 4 eggs
Preparation
Cook the rice with a little salt and set aside. In a pan, make two egg omelets, cut them into small squares, and set aside. In the same pan, mix the diced roasted pork with chopped spring onions, the cooked rice, and the egg omelets. Add the soy sauce and salt to taste. Mix well and serve hot. The pork can be replaced with boiled chicken cut into small cubes.
