Side Dishes: Potatoes with Cheese
Ingredients
- 1kg of small potatoes
- Ricotta cheese or cottage cheese
- Salt and pepper
- Lemon
- Parsley
- Heavy cream or plain yogurt
- Bell pepper or tomato
Preparation
Boil the potatoes with their skin, previously washed. Peel them and cut them in half. Set aside.
Cream: In a bowl, mix the crumbled cheese, salt, and pepper to taste, the juice of half a lemon, and enough cream or yogurt to loosen the mixture. Add chopped parsley and mix well. Pour over the cooked potatoes and garnish with chopped bell pepper or tomato. This is a good side dish for red meat.
